Abstract

Why does the same plant make different amounts of its characteristic molecules in different places, and what is left in the jar after drying? This book answers with chemistry, physics and statistics: the Arrhenius equation and a minute-by-minute day–night carbon balance, showing that a wide day–night temperature swing helps only when days stay near the photosynthetic optimum; the 2-O-acetylglucomannan of Dendrobium officinale, its mannose-to-glucose ratio and degree of acetylation, and the Chinese Pharmacopoeia's phenol–sulfuric acid assay with a Beer–Lambert standard curve; the reversible first-order dehydration of 6-gingerol to 6-shogaol, with activation energies of 75 and 52 kJ/mol fitted to published data, and the finding that "twice as hot" dried ginger would need about two-thirds conversion; the A-type proanthocyanidins of cranberry, the BL-DMAC assay and the roughly 2.2-fold effect of the choice of standard, with laboratory anti-adhesion findings kept strictly apart from the clinical evidence of the Cochrane review; the triple point of water (611.657 Pa, 0.01 °C), the Clausius–Clapeyron equation and drying times under a uniformly retreating ice front, and the retention of heat-sensitive compounds by freeze-drying and hot-air drying; and the sampling statistics behind a certificate of analysis, the blind spot of fingerprint similarity scores, contaminants and water activity (microbial growth stops below about 0.6; the usual target of 0.2 to 0.3 is set for quality).

The eight chapters are read beside the Shennong Bencao Jing, the Mingyi Bielu and Li Shizhen's Bencao Gangmu, and end with a four-step check for buying plant raw materials, binomial calculations for the triangle test, and a pre-registered blinded experiment comparing freeze-drying with hot-air drying at 60 °C for Bentong ginger (28 split lots, with the decision rule written as code). Marked boxes separate published evidence, runnable Python calculations (36, all checked), classical sources and the author's hypotheses. The book is not medical advice and does not claim that any plant or extract treats or prevents any human disease.
